Tasting notes
It shows a soft bright red, tending to garnet. The nose offers a broad and complex profile of floral scents, with hints of rose and violet. Fruity sensations, with notes also of balsamic liquorice, tobacco and leather. On the palate it stands out for its warmth, for a tannin often marked as a sign of youth, notes of sapidity and acidity, which close in a finish of delicate persistence. As time goes by, tannins have an evolution that "rounds up" the gustatory profile, making it even softer and more elegant.
Pairings
Just try to combine it with precious cured meats or a simple dish of tagliolini with truffles, followed by game or braised beef and aged cheeses. You will not regret tasting it without any pairing, together with a very special person.
Why we like it
The idea of combining different sensations to get the right balance is the base of the original concept of Barolo La Roncaglia. The grapes, used to make this Barolo DOCG, come from two different vineyards (crue Roncaglie, crue Capalot) and are left to ferment in contact with the skins for about twenty days. The aging in wood French oak barrels lasts for 36 months. A further four-month refinement in the bottles completes the wine before marketing. Barolo La Roncaglia is elegant, full-bodied, balanced and rich in nuances, well defined in all its components. It is good to wait two or three years, but if you could resist more, the mix of flavors and emotions would be even more unforgettable
